  • The Yo-Mix MY 800 from Danisco is a yogurt mixed culture. It provides a typical, strong yogurt taste. When added to cheese, it makes for a smoother dough. The MY 800 acidifies quickly up to a pH value between 4,7 and 4,6. Lower pH values can be achieved with slower acidification. This means that the pH value can be well controlled and the product is of consistently good quality.
