At the end of the yeast storage period, the champagne bottles are placed upside down in an inclined position in the openings of the perforated boards. Every day, the bottles are gently shaken and turned and tilted slightly so that they are almost upside down at the end of this shaking period. This allows the yeast to settle directly on the cork and the sparkling wine is ready for disgorging. The inventor of the riddling console was the widow Clicquot-Ponsardin (Veuve Clicquot in French).
